Scott’s involvement in the foods industry began at a very young age. Working in fine restaurants and managing the meat departments for grocery stores, Scott gained essential background knowledge in meat and fine foods. Jill started and operated her own preschool which grew to an enrollment of around 200 children.
After moving their family to Jackson Hole in 1993, the couple decided to open their own gourmet meat market, Choice Meats. After ten years of success they sold the business. Then in 2009, Scott’s passion and vision for a one of a kind high end gourmet market opened the doors to Pearl St. Market in downtown Jackson Hole, Wyoming.
On most days, you will find Scott right behind his beloved meat counter where you can ask his personal advice on the best way to cook your incredibly delicious meat and fish. That kind of personal service has set Pearl St. Market apart, and it is that personal service which we will always embrace. Our customers matter to us!

Chef Beau says, "My passion for food came at a very young age. Food has always brought my family together. I have always loved to eat, and spend time in the kitchen, and I had always wanted to develop my love for food into something more. Food is science, and a kitchen is my favorite laboratory."
Beau has degrees from the University of Wyoming (Bachelor’s Degree in Business Management) and from The Culinary Institute of America, in Hyde Park (Bachelor’s Degree in Culinary Arts). He has worked as an Executive Sous Chef at The Brown Palace Hotel in Denver, CO, as Executive Sous Chef at the Snake River Grill in Jackson, WY, and as Chef Owner of Trio American Bistro also in Jackson.
